2013 Inglenook Cabernet Sauvignon
Rutherford, Napa Valley
The Winery
Founded in 1879 by Finnish sea captain Gustave Niebaum and lovingly restored by Francis Ford Coppola, Inglenook stands among Napa Valley's most historic estates. Today, meticulous farming, heritage vineyards, and restrained winemaking have returned Inglenook to the elegant, age-worthy style that made it one of California's original icons.
Tasting Notes
Now entering a beautiful window of maturity, the 2013 displays layers of blackcurrant, cassis, cedar, graphite, dried tobacco, and baking spice. A decade of bottle age has softened its once-powerful tannins into a silky texture while preserving remarkable freshness and precision. Sophisticated, harmonious, and unmistakably classic Rutherford.
Pairing Recommendation
Celebrate this mature Cabernet with herb-crusted rack of lamb, roasted fingerling potatoes, and grilled asparagus. The wine's cedar and savory complexity also shine alongside a perfectly cooked dry-aged ribeye topped with decadent bone marrow.
2019 Fisher Vineyards Mountain Estate Cabernet Sauvignon
NAPA VALLEY
The Winery
Since 1973, Fisher Vineyards has quietly produced some of Napa Valley's most compelling mountain Cabernets. Sourced from rugged, high-elevation vineyards, the estate focuses on low yields and meticulous farming, crafting wines that marry mountain intensity with remarkable polish.
Tasting Notes
The 2019 is powerful yet beautifully composed, offering concentrated blackberry, blueberry, violet, espresso, dark chocolate, and crushed rock. Firm mountain tannins provide impressive structure, while vibrant acidity keeps the wine energetic through a long, mineral-driven finish. This is a Cabernet built for both immediate enjoyment and extended aging.
Pairing Recommendation
Pair with coffee-rubbed prime rib, grilled New York strip with rosemary butter, or smoked beef short ribs. Roasted mushrooms or charred broccolini make ideal accompaniments, echoing the wine's earthy complexity.
2021 Mayacamas Cabernet Sauvignon
MOUNT VEEDER, NAPA VALLEY
The Winery
Few wineries embody Napa Valley's heritage like Mayacamas. Since 1889, the estate has remained steadfast in producing Cabernet Sauvignon that emphasizes mountain terroir, restraint, and longevity over sheer power. High atop Mount Veeder, volcanic soils and cool elevations create wines renowned for their freshness and extraordinary aging potential.
Tasting Notes
Youthful and beautifully structured, the 2021 reveals vibrant cassis, black cherry, mountain herbs, graphite, cedar, and crushed stone. Firm tannins frame the wine without overwhelming it, while bright acidity and remarkable mineral tension promise decades of evolution. A benchmark for traditionally styled Napa Cabernet.
Pairing Recommendation
Mayacamas' hallmark freshness and mountain-born structure make it an exceptional partner for dishes that emphasize herbs, earth, and slow-cooked flavors rather than sheer richness. Pair it with porcini mushroom risotto, where the wine's savory notes and vibrant acidity elevate the earthy mushrooms without overpowering them. It also shines alongside oxtail ragù over pappardelle, allowing its graphite, herbal, and mineral character to complement the game's depth.
